Mom's French Bread Dough
- 3 T yeast
- 1/2 C - 1 C sugar
- 1C warm water
Dissolve together
- 3 C warm water
- 1 C shortening
- 2 T salt
- 3 eggs
- 9+ C flour*
Mix all ingredients together really well until smooth & elastic, about 10 min. Let rise 30 min, the mix down and do so twice more.
From here you can form into four loaves, 2 big loaves, rolls, whatever you wish. Let rise for 30 min. Bake 350° @ 28 min. If making loaves of bread, make sure they have a hollow sound when you tap on them. Don't be afraid to add more time if necessary. Let the loaves cool completely in their pans.
*You may also use 1/2 white with 1/2 wheat flour. If using all wheat flour, add a little more yeast and weigh your dough larger than normal.
