Lydia's Lemon Bars
Crust:
- 1 1/2 cups flour
- 2/3 cup butter- soft
- 1/2 cup sugar
- 1/4 tsp salt
- zest of half of a lemon
- seven eggs- beaten well
- 2 cups sugar
- 1/4 cup fresh lemon juice
- 1 1/4 tsp baking powder
- 3 1/2 Tbsp flour
- For the crust, mix the flour, sugar, salt, and zest well. Add the butter and cut it in till it resembles fine crumbs. about the size of peas.
- Pat the crust mixture tightly in a 9 by 13 pan that is lightly greased. Bake for 15-20 minutes at 350 degrees or till the crust is just barely golden on the top.
- For the filling, add the sugar to the eggs then add the rest of the ingredients till incorporated.
- pour into the pan and bake for another 15-30 minutes or till set.
- Cool completely, cut, powder with powdered sugar.
