Lydia's Lemon Bars

Crust:

  • 1 1/2 cups flour
  • 2/3 cup butter- soft
  • 1/2 cup sugar
  • 1/4 tsp salt
  • zest of half of a lemon
Filling:

  • seven eggs- beaten well
  • 2 cups sugar
  • 1/4 cup fresh lemon juice
  • 1 1/4 tsp baking powder
  • 3 1/2 Tbsp flour



  1. For the crust, mix the flour, sugar, salt, and zest well. Add the butter and cut it in till it resembles fine crumbs. about the size of peas.
  2. Pat the crust mixture tightly in a 9 by 13 pan that is lightly greased. Bake for 15-20 minutes at 350 degrees or till the crust is just barely golden on the top.
  3. For the filling, add the sugar to the eggs then add the rest of the ingredients till incorporated.
  4. pour into the pan and bake for another 15-30 minutes or till set.
  5. Cool completely, cut, powder with powdered sugar.
*Something I tend to do in order to not have the filling stick to the sides is right before I pour the filling in, lightly grease the sides.
