Grandma Jean's Chocolate Cream Pie
- 1 cup granulated sugar
- 5 Tbsp cornstarch
- 1/4 tsp salt
- 2 1/2 cup milk
- 3/4 cup half and half
- 3/4 cup semisweet chocolate chips
- 3 egg yolks- beaten
- 1 tsp vanilla
- 2 Tbsp unsalted butter
- whipping cream for topping
- In a saucepan, stir together the sugar, cornstarch, and salt.
- Slowly whisk in the milk and half and half.
- Add the chocolate chips.
- At medium heat, heat until the chocolate is melted and the mixture starts thickening, mixing constantly.
- Warm the eggs by adding a little bit of the chocolate mixture, stirring constantly so the eggs won't curdle. Then add the egg mixture to the chocolate mixture.
- Continue to stir for 2 minutes, then remove from heat and add the butter and vanilla. Stir till melted and well mixed and pour into a prepared pie crust.
- Chill for 4-6 hours. Serve with whipped cream and enjoy!
