Grandma Jean's Chocolate Cream Pie

  • 1 cup granulated sugar
  • 5 Tbsp cornstarch
  • 1/4 tsp salt
  • 2 1/2 cup milk
  • 3/4 cup half and half
  • 3/4 cup semisweet chocolate chips
  • 3 egg yolks- beaten
  • 1 tsp vanilla
  • 2 Tbsp unsalted butter
  • whipping cream for topping

  1. In a saucepan, stir together the sugar, cornstarch, and salt.
  2. Slowly whisk in the milk and half and half.
  3. Add the chocolate chips.
  4. At medium heat, heat until the chocolate is melted and the mixture starts thickening, mixing constantly.
  5. Warm the eggs by adding a little bit of the chocolate mixture, stirring constantly so the eggs won't curdle. Then add the egg mixture to the chocolate mixture.
  6. Continue to stir for 2 minutes, then remove from heat and add the butter and vanilla. Stir till melted and well mixed and pour into a prepared pie crust.
  7. Chill for 4-6 hours. Serve with whipped cream and enjoy!
