Banana Cake

Cake:
  • 1/2 cup butter- soft
  • 1 cup of sugar
  • 2 large eggs
  • 1 tsp vanilla
  • 2 cups flour
  • 2 tsp baking soda
  • 1/2 tsp salt
  • 3 medium bananas- 1 1/2 to 2 cups
  • 1 cup sour cream
Coffee Frosting:
  • 1/3 cup butter- soft
  • 2 1/2 cup powdered sugar
  • 2 tsp instant coffee or espresso powder
  • 2-3 Tbsp milk or heavy cream
  1. Cream butter and sugar. Add the eggs one at a time, then add the vanilla.
  2. In a separate bowl, add the bananas and sour cream. In another separate bowl, add the dry ingredients. Alternate adding the dry mixture and banana mixture to the butter mixture.
  3. Pour into a greased 9 by 13 pan. Bake at 350 degrees for 35-40 minutes.
  4. For the frosting, beat the butter and sugar till smooth. dissolve the instant coffee in the milk and add to the sugar mixture. Beat until smooth and fluffy.
