Banana Cake
Cake:
- 1/2 cup butter- soft
- 1 cup of sugar
- 2 large eggs
- 1 tsp vanilla
- 2 cups flour
- 2 tsp baking soda
- 1/2 tsp salt
- 3 medium bananas- 1 1/2 to 2 cups
- 1 cup sour cream
- 1/3 cup butter- soft
- 2 1/2 cup powdered sugar
- 2 tsp instant coffee or espresso powder
- 2-3 Tbsp milk or heavy cream
- Cream butter and sugar. Add the eggs one at a time, then add the vanilla.
- In a separate bowl, add the bananas and sour cream. In another separate bowl, add the dry ingredients. Alternate adding the dry mixture and banana mixture to the butter mixture.
- Pour into a greased 9 by 13 pan. Bake at 350 degrees for 35-40 minutes.
- For the frosting, beat the butter and sugar till smooth. dissolve the instant coffee in the milk and add to the sugar mixture. Beat until smooth and fluffy.
