Lydia's White Chocolate Buttercream Frosting
- 1/2 cup heavy cream
- 1/2 cup Ghirardelli white chocolate chips
- 3 sticks of unsalted butter
- 3 tsp vanilla
- 3 cups powdered sugar, sifted
- 1/4 tsp salt
- In a double boiler, melt the white chocolate. Once melted, remove from heat and cool slightly. Add the heavy cream and mix till smooth. I will be runny, that's normal. Cool completely.
- In a mixer, beat the butter till light and fluffy. Add the salt and vanilla. then add the white chocolate ganache. Beat well.
- Add the powdered sugar one cup at a time. Once all three cups have been incorporated, beat on high for 2-3 minutes, then on low for 10 minutes to remove bubbles.
