Banana Cake

  •  1/2 cup butter, soft
  • 1 cup granulated sugar
  • 2 large eggs
  • 1 tsp vanilla
  • 2 cups baking soda
  • 1/2 tsp salt
  • 1 1/2 cups ripe bananas, about 3 medium bananas
  • 1 cup sour cream


Coffee Frosting:

  • 1/3 cup butter, soft
  • 2 1/2 cups powdered sugar
  • 2 tsp instant coffee
  • 2-3 Tbsp milk or heavy cream
*Makes 1 dozen cupcakes


  1. Cream the butter and sugar till light and fluffy. Add the eggs one at a time. Stir in vanilla.
  2. Combine the dry ingredients in a separate bowl and set aside. In another bowl mash the bananas and add the sour cream. Alternate adding the flour mixture and banana mixture to the butter mixture. DO NOT OVERMIX.
  3. Pour into a greased 9 by 13-inch pan, or greased cupcake liners, and bake at 350 degrees for 35-40 minutes. Cupcakes will bake for 15-18 minutes or till the toothpick comes out clean. Cool completely before frosting.
  4. For the frosting, beat the butter and sugar till smooth. Dissolve the coffee in the milk and add. Beat till fluffy. For cupcakes, triple the frosting recipe.
