Lydia's Chocolate Cupcakes
- 1 cup flour
- 1/2 cup brown sugar
- 1/2 cup granulated sugar
- 1/4 + 2Tsp cocoa powder, sifted
- 1 tsp baking soda
- 1/4 tsp salt
- 1 large egg, beaten
- 1/2 cup buttermilk
- 1/2 cup vegetable oil
- 1/2 cup boiling water
- Mix all dry ingredients in one bowl and set aside.
- Beat the egg, oil, and buttermilk together in a larger bowl.
- Add the dry ingredients to the wet ingredients and mix. Boil the water and add. Let the batter cool. And scoop evenly into the lightly greased cupcake liners.
- Bake at 300 degrees for 18-20 minutes or till your toothpick comes out clean.
- Cool completely and you can either frost with your preferred frosting and fill with your preferred fillings.
