Lydia's Chocolate Cupcakes

  •  1 cup flour
  • 1/2 cup brown sugar
  • 1/2 cup granulated sugar
  • 1/4 + 2Tsp cocoa powder, sifted
  • 1 tsp baking soda
  • 1/4 tsp salt
  • 1 large egg, beaten
  • 1/2 cup buttermilk
  • 1/2 cup vegetable oil
  • 1/2 cup boiling water

  1. Mix all dry ingredients in one bowl and set aside.
  2. Beat the egg, oil, and buttermilk together in a larger bowl. 
  3. Add the dry ingredients to the wet ingredients and mix. Boil the water and add. Let the batter cool. And scoop evenly into the lightly greased cupcake liners. 
  4. Bake at 300 degrees for 18-20 minutes or till your toothpick comes out clean. 
  5. Cool completely and you can either frost with your preferred frosting and fill with your preferred fillings.
