Italian White Bean Soup (Sexy Soup)
- 2 Tsp olive oil
- 1 lb Italian sausage, ground
- 1 yellow onion, diced
- 3 large cloves of garlic, minced
- 3 medium carrots, diced
- 2 celery stalks, diced
- 1 cup coconut milk, or heavy cream
- 4 cups chicken broth
- 1/2- 1 tsp red pepper flakes
- 2 cans of white beans, drained
- 2 cups kale, chopped fine
- 1 sprig rosemary, fresh
- 2 bay leaves
- salt to taste
- Cook the sausage at medium heat.
- Add vegetables and cook till translucent and tender.
- add the broth, seasoning, beans, rosemary, and bay leaves, and bring to a boil. Reduce heat ad simmer for 15 minutes.
- Discard the rosemary and bay leaves. Add the kale and coconut milk or heavy cream.
