Lemonhead cookies (adapted from RubySnap)


Lemon Head cookies
½ cup butter, softened
1 cup sugar
1 large egg
½ cup sour cream
1 T lemon zest
1 tsp vanilla
1 tsp lemon extract
2 cups flour
1 tsp baking powder
½ tsp baking soda
¼ teaspoon salt
1 cup whole lemonhead candies
In a large bowl, cream butter and sugar until light and fluffy. Beat in egg, sour cream, lemon zest, lemon extract and vanilla. Combine dry ingredients; gradually add to the creamed mixture. Fold in the candy.
Drop by rounded tablespoonfuls 2 in. apart onto well-greased baking sheets. I suggest making sure that only the dough is touching the pan, as the candy sticks to the pan. Bake at 350 for 12-15 minutes or until set. The candy may have melted onto the pan: if this has happened, take a knife or toothpick and push the candy back onto the cookie while it’s still hot. Yield: about 3 dozen.
